
Filet - Texas Style
Ingredients
- 6 oz Filet
- Kosher salt - to taste
- Ground black pepper
- 1 tbsp Grapeseed oil
- 2 tbsp Unsalted butter
- 2 Sprigs fresh rosemary
- 1 clove Garlic
Instructions
- Pat meat dry, set out to get to room temperature 20-30 minutes
- Preheat oven to 450 degrees F
- Generously season all sides of filet with salt and pepper, to taste
- Heat a cast iron skillet over high heat until hot, add grapeseed oil
- Once oil begins to smoke, add filet to pan. Cook without moving 2-3 minutes per side until crust has formed
- Flip steak, add butter, rosemary and garlic to pan
- Tilt pan, spoon butter continuously over steak for 2-3 minutes
- Transfer pan to oven for 7 minutes for a medium rare steak
- Transfer steak to a cutting board and let rest for 10 minutes before slicing and serving
